1. Preheat oven to 180°C fan. Place silicone muffin cases into a muffin tray.
2. Soften onion in a pan (3–4 mins). Add spinach, cook until wilted & bacon lardons. Once cooked, set aside.
3. Divide potato farl chunks evenly between muffin holes.
4. Whisk eggs, milk, mustard, salt, and pepper.
5. Stir in the veg & bacon mix
6. Pour egg mixture into each muffin hole (about ¾ full)
7. Top with grated cheese
8. Bake for 20–25 minutes until set and golden
9. Let sit for a few minutes before removing.
