Potato Farls Breakfast Muffin Bake

Imagine the ultimate breakfast comfort captured in a golden bite. These muffins feature a soft foundation of our Ormo potato farls, nestled in a fluffy, savoury egg custard. Packed with smoky bacon, sweet softened onions, and tender spinach, each muffin is finished with a bubbly, melted blanket of cheddar cheese. Warm, hearty, and delicious, they are the perfect cosy ritual to kickstart your morning.

Ingredients:

  • 3–4 Ormo Potato Farls, cut into small chunks
  • 4 eggs
  • 120ml milk
  • 1 small onion, finely chopped
  • 1 handful spinach (fresh or frozen, squeezed dry)
  • 60g grated cheddar
  • 120g Bacon Lardons
  • 1 tsp wholegrain mustard (optional)
  • Salt & pepper
  • 1 tsp oil

Method:

1. Preheat oven to 180°C fan. Place silicone muffin cases into a muffin tray.

2. Soften onion in a pan (3–4 mins). Add spinach, cook until wilted &amp; bacon lardons. Once cooked, set aside.

3. Divide potato farl chunks evenly between muffin holes.

4. Whisk eggs, milk, mustard, salt, and pepper.

5. Stir in the veg & bacon mix

6. Pour egg mixture into each muffin hole (about ¾ full)

7. Top with grated cheese

8. Bake for 20–25 minutes until set and golden

9. Let sit for a few minutes before removing.
