Lemon Chicken & Herby Mayo Toasted Floury Baps

There is nothing quite like the softness of a floury bap. This recipe lifts the humble sandwich into something special, pairing tender shredded chicken with a bright, zingy herb mayo. Add that to crisp cucumber and peppery rocket inside a perfectly toasted Ormo® floury bap, it’s a simple, nostalgic pleasure made for a perfect lunch for two!

Ingredients:

  • 2 Ormo® floury baps
  • 2 cooked chicken breasts, shredded
  • 4 tbsp mayonnaise
  • Zest of 1 lemon
  • 1–2 tsp fresh lemon juice
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp fresh parsley, finely chopped
  • Small handful fresh rocket
  • ½ cucumber, sliced into ribbons
  • Olive oil
  • Salt & freshly cracked black pepper

Make the herby mayo

In a bowl, mix mayonnaise, lemon zest, lemon juice, chives and parsley.

Season with salt and plenty of black pepper. Taste and adjust — it should be fresh and zingy.

Prepare the chicken

Shred the cooked chicken and fold through half of the herby mayo mixture so it’s lightly coated but not heavy.

Toast the floury baps

Slice in half and toast until golden on the outside but still soft inside.

(Optional: brush lightly with olive oil before toasting for extra crispness.)

Assemble

Spread the remaining herby mayo onto the base.

Top with rocket, lemon chicken and cucumber ribbons.

Finish with an extra crack of black pepper and pop the lid on.
