Fruit Loaf Bread Pudding

Nothing evokes the warmth of a cosy kitchen quite like a classic bread and butter pudding!This simple pudding turns humble fruit loaf into an indulgent treat, balancing the crisp, buttery edges of toasted bread with a soft, custard soaked centre. Crowned with tart fresh berries and a dollop of yoghurt, it’s the ultimate weekend comfort food.

Ingredients:

  • 6–8 slices fruit loaf (slightly stale works best)
  • 40g butter (softened)
  • 50g Dried Fruit
  • 2 eggs
  • 300ml milk
  • 50g sugar
  • 1 tsp vanilla extract
  • 1 tsp mixed spice or cinnamon
  • Zest of 1 orange
  • Greek yoghurt (for serving)
  • Raspberries (for serving)

Method:

1. Preheat oven to 180°C fan. Grease a baking dish.

2. Butter each slice of fruit loaf. Cut into chunks.

3. Arrange half the bread in the baking dish and sprinkle over the Dried Fruit.

4. Layer the rest of the bread on top.

5. Whisk together eggs, milk, sugar, vanilla, spice and orange zest.

6. Pour the custard over the bread, pressing the bread down to soak it up.

7. Let the mixture sit for 10-15 minutes before baking.

8. Bake for 30-40 minutes, until golden and sit.

9. Sprinkle with a little icing sugar and serve with greek yoghurt and blueberries.
